ABOUT THIS COFFEE |
This is another one of our 100% single variet lots we recently acquired from Colombia. This is made up of Colombia variety, a hybrid of several Catimor varieties initially brought to Colombia due to their resistance to coffee leaf rust during the rust epiemic of 1985. It ripens to deep true yellow hence the name Amarillo. This coffee has undergone a meticulous modern style of processing. after the cherry is brought together to the washing station by the overt 70 growers the cherry is first fermented for nealry 3 days. they monitor the temp, and pH to determine the finishing point. after that the cherry is pulped out of it's skin and fermented fro another 2 days this time underwater in tanks. That is followed by washing and finally solar rying on patios. The hybrid nature of the processing brings great cleanness to the flavors in this coffee. This coffee is both bright and sweet. It has a medium light body, an a fleet tropical fruit finish. |

Extended double fermentation: 49-60hr in whole cherry fermentation, pulped, then a 36-48hr tank fermentation,then washed and finally sun-dried on patios. |
