Our first new coffee of 2025! This is a lot made of 100% single variety: Pink Bourbon. Pink Bourbon is a Natural mutation of the classic Bourbon variety. It turns a shade of pink rather than deep red when it is ripe, ready to be picked.This coffee was grown in the Palestina, Pitalito, Salado Blanco, Acevedo municipalities of Huila Colombia.It was grown by a small producer group of 10 women and 15 men. Beside growing and picking stunning cherry they are also resposible for the immaculate processing to which these coffee cherries are exposed.They employ a slightly modified version of the classic washed process with a couple of steps ammended specifically to give us the result we find in this amazing coffee. These coffee cherries were first pulped from their skin then fermented under water for 50 hours. The beans are then washed clean before patio drying, finished in solar dryers.The flavors coming from this coffee are sweet, slightly esotic, and even slightly floral. a stunning example of this infrequently found coffee variety.
